South Beach Seafood Festival: In The Kitchen with Cibo Wine Bar and Miami Food Porn

Enjoy this In The Kitchen guest article by Dana Rozansky of Miami Food Porn who went behind the scenes with Chef Massimo Giannattasio of Cibo Wine Bar as he gears up for the South Beach Seafood Festival.

As October inches closer with each passing day, I (Miami Food Porn) get increasingly giddy about the moment I get to sink my feet into the sand while enjoying a lobster roll in one hand and an ice-cold beer in the other.

Yes, the countdown has officially begun to the Fifth Annual South Beach Seafood Festival!

Needless to say, you know where I’ll be come October 21.

To get my head in the game, I decided to sit down with one of the masterminds behind some of the top-notch seafood offerings I’ll be feasting on during the Festival.

Chef Massimo Giannattasio from Cibo Wine Bar is back for the Festival and will be bringing his A-game, in true Chef Massimo fashion.

Read on as the Chef dishes about his experience, his culinary inspiration and most importantly, the Festival we’ve all been (impatiently) waiting for!

MFP: What inspired you to start cooking?

MG: My Mom.

MFP: What dish are you most proud of and why?

MG: Everything that involves making everything from scratch. I like to get my hands dirty and create dishes from the ground up.

MFP: How do you feel the food culture in Miami has evolved in recent years?

MG: It is doing good but there is still room to grow. Events like South Beach Seafood Festival helps inspire the food scene in Miami.

MFP: What’s the strangest thing you’ve ever cooked and/or eaten?

MP: Guests ask for carbonara with shrimp….carbonara should never be with shrimp or any seafood actually.

MFP: What would your last meal be?

MG: Well, I am not in jail but if were to die tomorrow I would experience life…not eat. I have eaten plenty in my lifetime!

MFP: Who is your chef role model and why?

MG: My Mom. And every chef that has trained me in my career. And every chef I have worked with in my career. I get inspiration from everyone.

MFP: When you’re not in the kitchen, where are you?

MG: Home with my wife and my dog (a Cockapoo, his name is “Ciccio” and it means fat).

MFP: How did you first get involved with the South Beach Seafood Festival?

MG: With my friend Rosemary Staltare who introduced me to the producers!

MFP: What will you be serving up at this year’s event?

MG: I have an idea but we will leave it as a surprise…….

MFP: In one sentence, why should people come check out this year’s festival?

MG: To see me!

So there you have it! Interested in meeting the man, the myth, the legend himself? Even more interested in scarfing down his legendary dishes? How about washing them down with beverages galore from 30+ open bars?
