South Beach Seafood Festival preparation is in full swing! Executive Chef of Meat Market, Sean Brasel recently sat down with us to talk about all things South Beach Seafood Week, including the upcoming ‘Cooking & Cocktails’ dinner happening at Meat Market on October 17th.
South Beach Seafood Week’s Cooking & Cocktails

The Meat Market
When you think of dining on Lincoln Road the word ‘touristy’ likely comes to mind, but the crowd dining in and outside of Meat Market doesn’t look like they ended up there by chance.
This restaurant is a true staple in Miami’s evolving culinary scene and brings a fine dining experience right into the heart of South Beach.
Colorado native, Chef Sean Brasel, opened Meat Market in 2008 with a mission to bring his fine flavors, innovative dishes and damn good food based on his experiences developed over the years to Miami.
The tongue-in-cheek, feminine driven steakhouse concept expanded from its original location in South Beach to Puerto Rico, Palm Beach and will soon open another location in Tampa. Meat Market has a swanky bar and wine cellar boasting vintage and rare collections with one heck of a happy hour.
Sean creates mouthwatering, innovative dishes such as a Short Rib Ravioli, Asian BBQ Lamb Ribs, a Wood-grilled Filet topped with Foie Gras and Shaved Black Truffle, and a Seabass with Truffle Mash and Wild Mushrooms making it no surprise Meat Market is about to celebrate a whole decade of dining on Lincoln Rd.
When asked what his favorite dish is to prepare in a competition, Brasel casually responds, “In general, overall? A dish I’ve never made before. Every event I do, I’ve never practiced the dishes. I don’t want to necessarily rehearse it. The moment I make it, it’s do or die. I like to just paint stuff in my head. The favorite things I make, it’s the first time I’ve made it. “ Brasel says.
A do-or-die moment, now that’s a lot of pressure!
South Beach Seafood Week’s VIP Chef Showdown
It’s also no surprise that Chef Brasel is a two-time Champion at South Beach Seafood Week’s VIP Chef Showdown. The Chef Showdown assembles 14 of Miami’s top executive chefs for an evening of competitive cook-offs where YOU are the judge.
In a perfect combination of competition level cuisine, tropically fresh cocktails, and live entertainment, the Chef Showdown tours guests through the best of Miami’s culinary scene. This is a CAN’T miss experience for all.
He will be defending his Surf n’ Turf title for the third time at this year’s event on October 19th.
When it comes to game time at the Chef Showdown, Brasel shares, “The biggest challenge is not the fact of just making the dish, it’s the matter of how you present your dish to the customers. You need to eat the whole dish to ascertain the entire value. Sometimes people take your dish and pick it apart. You never get the element of the dish if you’re only eating the top layers or the bottom.”
While we’re on the topic of picky eaters, neither of us like Salmon, however the Salmon Cakes Brasel prepared that will be served at the ‘Cooking and Cocktails’ event were game changers!
We enjoy a little friendly competition around here, especially since Brasel is competing for his title in the Chef Showdown. When asked if he had a message for his competitor, Brasel replies, “Bring your best game, it brings me better. I’ll be disappointed if he doesn’t impress me with his bite. It’s like when you get in the ring with someone and they can’t fight back. Then what’s the purpose? I want to be nervous on stage.”
Brasel’s #ChefShowdown dish is still hush-hush. We know that he is a force to be reckoned with after his dish last year blew us away. Be sure to stick close to the stage during Brasel’s competition performance. We hear there will be go-go dancers and tequila going down!
Meat Market is also one of the 20 participating restaurants at #SobeSeafood Week’s main event on Saturday, October 20th, the South Beach Seafood Festival.
