Papa’s Raw Bar
So let’s get back to Papa’s Raw Bar! There you’ll find a little taste of Key West right in Lighthouse Point. Chef Chad and the Papa’s team is excited to head back to South Beach for its second year participating.
Chef Chad loves visiting Miami to try new restaurants and meet new people. Papa’s is the only participating restaurant that isn’t located in Miami, so it’s a unique experience for him and his staff. As he said with a grin on his face, “It’s a different animal down there…”
In 2017, Chef Chad competed in Friday’s VIP night of competition (the Chef Showdown).
He said, “It felt like going from the Little Leagues all the way to the Majors. It was challenging and fun, but [I felt like there was] pressure to focus on the competition,” so he’s looking forward to focusing on FUN this year!
South Beach Seafood Festival: VIP Perks with Papa’s
This year, Chef Chad is using his prep time to amp up his Saturday festival dishes and learn new skills! Papa’s Raw Bar can be found exclusively in the Goya Foods VIP Hospitality Village. They’ll be providing complimentary sampling all day long.
So, what can you expect to enjoy on October 20th care of Papa’s Raw Bar?
They will be serving Tuna Yukke Tacos, a spicy twist on traditional tuna tacos! Anyone who’s tasted Chef’s food knows these will be the best tuna taco at the seafood festival.

Can’t wait until October 20th to get your hands on them? Make Papa’s signature Tuna Yukke Taco right at home. Here’s how:
Tuna Yukke Taco Recipe
To make the Yukke sauce, combine the following ingredients with your desired amount of tuna, finely chopped or ground:
- 1 cup of kimchee base
- 1/2 cup of olive oil
- 2 tablespoons sesame oil
- 1 large egg, lightly beaten
- 3 finely chopped scallions
Chef Chad makes his Tuna Yukke Taco shells using fried rangoon skins and then fills them generously with the tuna yukke.
Top it all off with seaweed salad, fresh masago, eel sauce and Papa’s own signature seafood sauce, which is available for purchase at the restaurant for $8/pint.
I had so much fun going behind the scenes with Chef Chad to get a sneak peek at what he’s bringing to the table at this year’s South Beach Seafood Festival. But I couldn’t leave yet…not without devouring at least one of their sushi rolls.
If you’re into the riceless roll thing, Papa’s gives you plenty of options.
The best (and probably the prettiest) being Zannie’ Hibiscus Roll — avocado, masago, seaweed salad, wahoo, tuna and salmon, drizzled with eel sauce, spicy wasabi mayo and crunchy flakes, rolled in soy paper.
