Chef Peter Vauthy
In anticipation of the decadence to come, I sat down with the man, the myth, the legend; Chef Peter Vauthy of Red, the Steakhouse South Beach.
Forget what you think you know about Peter because I had the opportunity to speak with him and have the scoop for you.
For instance, did you know that Peter has a masters in political science and public policies and was interviewing for a position with a congressman? Yup, it’s true.
It wasn’t until his mom encouraged him to pursue the culinary arts that he enrolled at L’Academy de Cuisine, where he made French onion soup with just an onion and water on his first day. If you’ve had the pleasure of tasting his food, it comes as no surprise to you that he graduated with honors.
Peter lives in South Beach approximately two blocks from Red and rides his bicycle to work. He also has two dogs; French bulldog, Capone, and American Eskimo, Peanut, with whom he loves to watch the sunset at Monty’s.
Red, the Steakhouse South Beach is primarily known for its top notch steaks and has earned the title of Best Steakhouse in Miami from countless outlets over the years. BUT…
…you may not know that Peter actually prefers to prepare pasta (hence that creamy cacio é pepe many can find on Red’s menu) and seafood!
I saw him pull the meat off a 1lb lobster in a snap, coat it in butter, stuff it with fresh crab, and pop it in the oven in a matter of minutes.
The two-time champion of the South Beach Seafood Festival’s Chef Showdown hung up his competition gloves— err… knives in 2017 and now lends his expertise as a judge for the event.
The festival’s adrenaline fueled Friday night blowout, which takes place on October 25th this year, is one of those experiences you have to see to believe.
Peter hopes the returning competitors took his advice from the previous two years he’s been judging and upped their game. Plus, guests get a vote as well!
I’m excited to try everyone’s competition-level cuisine and cast my vote! We will “sea” who takes the 2019 title soon enough.
This year, attendees can look forward to Red’s decadent crab cakes, and mouth watering surf & turf kabobs to tame their appetites while partying on the sand. Oh, and here’s that massive crab stuffed lobster I mentioned earlier and it was delicious.

I can’t wait to see everyone on the sand!
