Enjoy the first “In The Kitchen” guest article by Prickly Fresh who went behind the scenes with Chef Sean Brasel of Meat Market gearing up for the South Beach Seafood Festival.
Meat Market, located on Lincoln Road, is changing the steakhouse game – as Executive Chef Sean Brasel will tell you.
“Meat Market is a newer modern version of the steakhouse. We feature classic steaks and sides, but we also like to place emphasis on newer creative dishes, either focusing on Meat prepared uniquely, creative healthy sides or our daily rotating specials.”
Before I go on about how great Chef Sean is – I need to tell you about some of my favorite dishes that he makes at Meat Market!
Asian BBQ Lamb Ribs
papaya slaw, peanuts, cilantro
These are out of this world – the flavor is so intense and the ribs were perfectly cooked.
Prime Roasted Bone Marrow
short rib cherry marmalade & grilled crostini
There are no words to explain this one. The flavors of the cherry and texture of the short rib work so well to break up the fattiness of the bone marrow. You have to get this one – there are no excuses!
lemon, parsley, capers, parmesan, evoo, cauliflower puree
As I mentioned before – Meat Market likes creatively preparing healthy dishes as well and this is definitely one of them. Cauliflower is something a lot of people pass by on the menu but this one is so worth it! The fresh flavor of the lemon, the briny from the capers and the parmesan cheese – how could you possibly go wrong?!
Contrary to popular belief, Meat Market also features a crudo bar with daily ceviche, fresh oysters shucked to order and stone crab when it’s in season.
Meat Market and the South Beach Seafood Festival
Speaking of seafood – the South Beach Seafood Festival is just around the corner and Chef Sean has a championship title to defend!
You can find him fighting for a repeat win in Battle Surf n’ Turf at Chef Showdown on Friday, October 20th.

Chef Sean is a South Beach Seafood Festival veteran and takes pride in all of the events in which he participates. He’s especially looking forward to Cooking and Cocktails where he can concentrate on making “unique bite sized dishes and focusing on one bite perfection.”
Fun Facts About Chef Sean:
- He started as a dishwasher when he was 16.
- When asked what his favorite thing to cook was he responded, “I really enjoy creating duos of flavors; showcasing two types of cooking styles on one plate.”
- When he’s not in the kitchen, you can find him snowboarding, fighting Taekwondo, competitively racing mountain bikes or motorcycles, or competing in a Spartan race.
