We’re only a few weeks away from the South Beach Seafood Festival happening Saturday, October 20th! This is easily the best seafood festival in Miami thanks to the culinary talent. Amazing Chefs from all over South Florida bring their very best to the sand for a day of sun and seafood.
I (Shay) had the pleasure of meeting Chef Edwin Delgado of Tanuki Miami and learning all about what he’s going to be doing at South Beach Seafood Week!
I got to enjoy the amazing ambiance of Tanuki while learning from one of the most progressive and fun sushi chefs around. Take a look at our interview below!
SoFloFooodie: When did you start cooking and why?
Edwin: In 1996 while I was working at a restaurant, my first boss asked me to help on the sushi line because they needed help. Little did I know it would turn into my full blown passion and career.
S: What is your favorite part about being a sushi chef?
E: Cutting the fish so precisely and decorating the plates/food for top notch presentation. I also love the energy and positive vibes that comes with preparing fresh creations for people during busy, peak times.
S: Speaking of when it is busy, any suggestions to other chefs who might just be starting out?
E: My advice is to always be prepared. If you are not prepared and you hit a rush, everything falls apart. You must always remain focused on each dish one at a time to ensure high quality.
S: Do you have a favorite dish to prepare?
E: I like preparing new style sashimi. It includes thick slices of fish with many sauces and decorations for a wow-factor presentation.
S: So, do you ever eat your own creations?
E: Usually I just taste things to make sure the flavor and texture is there. On my down time, I prefer to have other people cook for me!
S: What will you be serving at the South Beach Seafood Festival?
E: I will be creating a few different things, but they are still under construction as of now! Expect to see BAO buns for sure, and also something with a Latin twist. Maybe something along the lines of plantains with fish on top because I have a Latin background! You have to come out and see!
In addition to bringing his talent to the sand on Saturday, October 20th, Chef Edwin is also competing in the VIP #ChefShowdown on October 19th! He is coming in as a challenger, looking to take down the current champion in Battle Sushi!
